Ingredients
Milk | 1 cup (250ml) |

All Purpose Flour | 4 1/2 cups (550grams) |
Sugar | 1/2 cup (100grams) |
Butter | 1/2 cup (100grams) |
Green cardamom | 1 tablespoon (grounded) |
Yeast | 1 tablespoon |
Salt | pinch |
For the Filling
Butter | 150 grams |
Sugar | 150 grams |
Cardamom | 2 tablespoon grounded |
Instructions
- Whisk the yeast and a small amount of sugar into half a cup of warm milk to activate the yeast.
- Give it five minutes to settle before serving.
- Mix the flour, yeast mixture, sugar, salt, cardamom, and the remaining milk in a big bowl or in the bowl of a stand mixer. Blend thoroughly for three to four minutes.
- For ten minutes, let it be covered on the counter to rest.
- Knead dough by hand or in a stand mixer. Add room-temperature butter and knead for another 10 to 15 minutes.
- To create as much gluten as possible, give it a good knead.
- The dough should rest for two to three hours, or until it has doubled in size.
- Next, lay out the dough into a rectangular shape on a surface dusted with flour.
- The dough should be 1/3 (1 cm) thick.
- Spread the filling with the help of a spatula.
- Fold the dough into thirds, then roll it out again. Start to portion the dough into pieces.
- Shape each piece of the bun as desired.
- Place the buns onto the baking tray covered and let them rest for 45 minutes or until double in size
- Preheat the oven to 200 ºC (400 ºF).
- Bake the buns for 8 to 9 minutes or until golden brown.
- Remove buns from the oven and allow them to cool completely.
Notes:
- Winter: Dough will take longer to rise in winter.
- Summer: Dough will take much less time to rise.
- Milk: Adjust according to how dry the flour is, as all flours are different.
